Chicken Lasagna

Tonight was our preschool's holiday party and we were assigned a main dish to take to the potluck dinner. I decided to make a chicken lasagna, which I haven't cooked in years.

O was my special helper in the kitchen, chopping onion and assembling the layers of the lasagna. I bought the ingredients in bulk (including gluten free noodles, which turned out great!) and we ended up making 3 lasagnas total, because, why not? The whole world is going crazy and I'm starting to stockpile food.

Anyway, I have lots of good memories helping my mom make this specific lasagna as a kid, including the end when we get to snack on the broken bits of noodle and use them to scoop up any remnants of sauce in the pan. I showed O how to do this today and she loved it.

Our dish was walloped at the holiday party tonight!
